Savory Tomato Rice Tarragon Soup

2 tablespoons olive oil
2 garlic gloves, diced
2 red onions, diced
1 sweet red pepper, diced
8 paste tomatoes ( I recommend San Marzano), diced
4 cups vegetable stock
3 leaves kale, chopped
3/4 cups brown rice
1 tablespoon fresh tarragon, finely chopped
Salt & pepper to taste
1/2 cup milk or cream
Heat oil in large pot. Add onion, cook for 3 minutes until tender.
Stir in garlic, red pepper, tomato, cook for 3 minutes.
Stir in stock, add kale, rice and tarragon.
Season with salt and pepper, bring to a boil.
Reduce heat and let simmer for 30 minutes.
Add milk (or cream), simmer another 5 minutes.
Serve with fresh crusty bread. Enjoy!
