Pumpkin Oatmeal Cookies (Vegan)

INGREDIENTS - DRY
2 cups flour
1-1/3 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
INGREDIENTS - WET
1-2/3 cups sugar
2/3 cup canola oil
2 tablespoons molasses
1 cup pumpkin, cooked and puréed
1 teaspoon vanilla
1 tablespoon ground flax seeds
(optional, makes cookies more chewy)
Preheat oven to 350 degrees.
Mix dry ingredients and wet ingredients separately, then combine.
Line 2 baking sheets with parchment paper.
Drop by tablespoonful onto baking sheets 1" apart.
Flatten cookies with a fork.
Bake for 16 minutes. Rotate baking sheets midway.
Remove from oven and let cool completely.
